num num num

day...i have no clue...

today i'm supposed to provide a yummy recipe of mine.

mmm..

i sort of love to bake and cook.

i don't love how expensive it can be..

or how hot it gets in my kitchen..

but i do love to bake and cook.

husband and i were talking about my yummy pancakes the other day so i decided i would share that one.

i don't usually just bust out my own recipe

don't get me wrong, i've done it..and i've actually been quite successful at it.

but usually i just take someone else's recipe and make it my own.

i'm pretty good at figuring out what flavor needs to be added.

so this recipe was one that was given to me but that i tweaked to my own liking.



buttermilk pancakes.

2 eggs
1/4 cup and 2 tablespoons milk
1 tablespoon and 2 teaspoons melty [yes, melty] butter
1-1/4 cups buttermilk [and maybe just a little splash more]
2 1/2 teaspoons vanilla [usually i just dump some in..i love vanilla]
1-1/4 cups all-purpose [organic] flour [very loosely measured]
1-1/4 teaspoons baking powder
1-1/4 teaspoons baking soda
1 pinch salt [optional--but i wouldn't not do it]
1 tablespoon and 3/4 teaspoon [organic] sugar

whisk together the eggs, milk, butter and buttermilk.combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. feel free to adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.

heat a skillet/griddle up to medium heat.

use a 1/4 cup to scoop out batter.

keep it on the heat until the top of the pancake gets bubbly.

flip.

devour.


they're very tasty.

and they're best with buttermilk syrup.

perhaps this will be dinner tonight.

with eggs and bakey.
